Delicious Chettinad country chicken soup | naatu koli rasam recipe

 

welcome. am Anjappar Chetinad Restaurant chef tamilarasan here. Am going to make chicken recipe called  country chicken rasam or soup

 

INGREDIENTS:

finely chopped country chicken pieces – ¼ kg

 Cinnamon – 2 pieces

 Clove – 1 piece

 Cardamom -  1 piece

 Anise -  2 to 3

 Cumin – ½ Tsp

 Pepper – ½ Tsp

 fine chopped small onion – ¼ cup

 green chili –  2 to 3

 red chili powder – ½ Tsp

 Small onion – 3 pieces

 small tomato – 1 piece

 crushed garlic – ½ Tsp

 ginger-garlic paste – 1 Tsp

sesame oil -  1-1/2 Tsp

 cooking oil – 1 Tsp

 coconut milk – ¼ cup

 white Sause – 2 Tsp

 Jeera powder – ¼  Tsp

 Curry leaf – 1 Tsp

 Coriander leaf – 1 Tsp

COOKING COMMENTARY:

 First ignite the stove. Add sesame oil, add 1/2 spoon  cooking oil, after getting heat, for sauté, add anise, add 2 to 3 pieces dry chilly, add cardamom,  2 pieces of cinnamon, pepper, cumin.  Put all and saute it to golden colour. Add curry leaves, crushed garlic, one spoon of finely chopped green chilli and for those who need more hot may add additional finely chopped small onion. Since we use this as soup no need more masala, adding little is enough. Add salt gently, after saute slightly add ginger-garlic masala little, add one spoon chilli powder, 1/4 spoon  jeera powder, add  tomato, add 2 spoon of while sauté. Add little water at this stage add chopped chicken pieces how we need we can cut into smaller or bigger pieces as required for elders. It should cook for 5 minutes after adding chicken.

Add turmeric powder with this till masala gets mixed well with country chicken. We are going to add pepper too. After cooked well , add water for boiling for 2 minutes till get a boil and cover it. Now after cooking, add required amount of little water, add little salt after boiled well. Coconut milk is to be mixed up with coriander, pepper and putting all after checking it for salt. Let us serve. It is a healthy dish since the ingredients that are small onion, sesame oil, pepper, cumin present in this dish having medicine values. It is most suitable for who are having cough. The countrychicken rasam can be simply made at home and can be offered at morning or evening. It is such a fantastic dish. In our restaurant, majority of people would like to have this country chicken soup rather than mutton soup. There is no fat content in this dish.

Now the soup is getting ready. Let us add some coriander leaf and some crushed garlic. In our traditional chettinad food dishes, people like to have this country chicken soup out of all soup varieties. Let us add coconut milk and got boiled well. Coconut milk is concerned, when we add coconut milk with soup will give tastier than taking normally. Digestion problems won't arise when we take coconut milk and more over, it will be tasty and good for health. Finally add extra pepper for those who need more hot and spicy.
