am Mapla restaurant chef kamesh, am going to show you how to make Tasty "Guntur mutton fry"

 

INGRADIENTS:

Chopped mutton – 750g

Vegetable oil – 2 tspb

green chilli – 6-7  nos

clove – 10 nos

Anise – 2 nos

Red chilli powder – 2 tspb

chopped onion – 1 Big size

turmeric powder – ½ tspb

coriander powder,- ½ tspb

 ginger garlic paste – 2 tspb

cardamoms – 2 pieces

chopped tomato – 2 pieces

snuff powder – ¼ tspb

garam masala – ½ tspb

pepper powder – 2 tspb

Kapok buds (Marathi moggu) 2 pieces

Lemon juice - 1 tspb

cinnamon stick – 2 pieces

fried curry leaf – 2 tspb

 curry leaf – 1 Spring

salt – 1 tspb

GUNTUR MUTTON FRY

                    now am going to make "Guntur mutton fry" using these ingredients

 first putting two spoons of oil. Let the be heated. if we see this Andhra - Guntur mutton fry. It is an Andhra based dish. Now we see how to make. Get Oil heated in tawa. Add chopped green onion. Let's we adding two spoons of chopped green onion and sauté it to what extent onions are sautéing, the dish will be tasty to that extent. So, fry well. As for the Andhra people is concerned, they so fond of hot (chilly), the spiciness will be double than Tamil nadu. So that we are adding chili powder and adding green chilly too, if we split and add instead of adding fully the chilly will get into the dish, then it will even be spicy, that's what we are adding in split manner.

Since it is mutton, always buy the mutton be as soft, If you buy the mutton as hard as we cook it will be harder and harder. If we over cook the mutton it will become hard even. So, always buy the mutton be soft. If we cook in correct temperature

If we do less sauté, the dish will be very nice. Over cooking will spoil the dish. After boiling adding little bit of ginger-garlic paste, adding turmeric powder and boil it, let it turned to brown color. Add 1/2 spoon tomato and let we sauté, add little ginger-garlic paste and sautéing well. Put mutton pieces and again sauté well. After sauté, let's we put masala, chili powder, let we put one and half spoon of coriander powder, add one spoon of pepper powder. Let's we add water little and got mixed well. Sauté until the raw smell expels. Sauté well. If we add water frequently the masala will get bonded, sauté till it is cooked well. Let it dry well. Add salt after getting dry and sauté well. Now you see it is sautéing well and to well dry

mutton comes with juice, got blended well and dry. Now everything got blend with mutton and sauté well. Oil is now coming out and sauté well, now mutton got blended well. Adding green chilly has helped to cook well.
