Anjappar’s Delicious ‘Chettinad kaadai/quail pepper masala’
welcome, Anjappar chain of restaurant chef Tamilarasan here, now am going to make chettinad kaadai (Quail) pepper fry, one of the best item of super delicious chettinad dishes which is tamilnadu' s traditional food recipes
INGREDIENTS REQUIRED:
small onions, sesame oil, garlic cut in to small pieces,
Cinnamon,- 2 pieces
clove, - 10 pieces
Cardamom,- 3 pieces
Anise, - 1/2 tbsp
Cumin,- 1/2 tbsp
crushed pepper powder,- 2 tbsp
chilli powder,- 2 tbsp
Tania powder - 2 tbsp
dry chilly,- 6 pieces
curry leaves,- 1 spring
Kaadai (quail) chopped pieces – 8 pieces
COOKING COMMENTARY:
Let’s see how to cook, ignite the stove
Am using sesame oil in this dish. We can use sesame oil fully or we can use cooking oil too. We can make kaadai (Quail) or pepper fry doing well for those who are fond of taking hot pepper fries.
Now the Oil became hot and ready to use, add two pieces of cinnamon, two pieces of clove and we add pepper-Cumin powder, for sautéing add little pepper, Cumin, Anise, along with dry chilly four to five pieces, curry leaves, garlic and also it is good to use crushed pieces of garlic.
Let’s add small onions, since it is pepper fry, we don’t require masala much. So, we add a small amount of small onions, some big onions for crispness. If it turns into golden fry, we will get good flavor.
If we add little salt when it is under sautéing will reduce the cooking time and also, we can instantly prepare it at home and the kaadai will be available in all chicken markets as live, so that we can buy it and do this dish instantly.
Now it was sauté into golden color along with ginger- garlic paste of little amount until the greenish smell of ginger-garlic vanished. Hence sauté well, let’s we add two spoons of tomato pieces.
We can use this to prepare either kaadai (quail) masala or pepper fry. Usually for those who are taking chicken, this will be a different and tasty dish and healthy too.
This will keep your body good. Let’s add a little water and the tomato is nicely mixed. Let it cook until it is diluted. no need to cook kaadai (quail) for a long time. Minimum five minutes to 10 minutes is enough as cooking processing time.
Now onion and tomato got mixed well, we already added ginger-garlic paste and we added one spoon of chili powder, thania (grain) powder 1/4 spoon little Cumin powder, Anise powder, crushed pepper powder 1/2 spoon, even we have to add it at the final stage.
Finally, now the green smell has gone from masala. Add little oil if needed since this is pepper fry, oil has to be added little more then only we will get nice flavor, deep fry the masala with the available oil.
Now add little water and let it boil before adding kaadai (quail) pieces. Now the masala got saluted well, and the thick masala mix is ready now.
Add either kaadai (quail) into small pieces or fully those who want as a whole can add full pieces and dip it well into masala, so that cooking will be faster and keeping slow fire is good.
kids will be so fond of this since it's looking like sweet boil. So that they will enjoy more. We can have either full Pieces or can Scratch the body using a knife so that masala will get penetrated well and cover it and wait for two to three minutes.
Keep the stove in sim mode for some time in order to give taste. now let's see, the masala got mixed well with kaadai (quail), then pepper this is without directly using the pepper
Fry the pepper powder lightly in separate tawa. It will enhance the taste and flavor and the hotness will be medium if we add balanced pepper-Cumin powder. If you add pepper, two spoons and cumin, we will get more pepper.
If you use pepper directly, we will feel Bitter. Hence adding cumin is good. adding only black pepper is suitable for soup varieties and it will give additional impact as I told earlier. We added salt already, let's add 1/2 spoon of salt again
Now it has reached the finishing stage. Now let's add ghee a little bit. We added the pepper in a smaller amount already. If you add pepper at the final stage and stir well, the flavor will remain as it is and the flavor will give nice taste.
If you see, you will notice, kaadai (quail) got fried well. if we don't want masala absolutely you can remove it and use this amount of masala is enough to impart the delicacy when we eat.
