welcome. Anjappaer restaurant chef tamilarasan here, the recipe am going to do is chettinad chicken masala – chicken recipe
INGREDIENTS:
chopped chicken pieces with or without bone – 1/2kgchopped onion – 2 pieces
clove – 2 pieces
anise – 2 to 3 pieces
cardamom – 2 to 3 pieces
pepper powder – 1 Tsp
Coconut grated – 1/4 cup
preparation time: 10 min.
Cooking time: 30 to 40 min
Serve size: 3 to 4
COOKING COMMENTARY:
Now let's see, how to make this. Drop oil 3
to 4 spoons in tawa, after oil got heated put cinnamon – 2 to 3 pieces, add one
teaspoon urad dal, one teaspoon pepper, 2 to 3 pieces of anise, add 2 to 3 pieces
of cardamom, add 2 pieces of clove and add some cashew, add 4 to 5 pieces of dry
chilli. We can put 2 pieces of garlic either fully or crushed, put 2 pieces chopped
onion either big or small.
According to number of persons going to eat,
onion can be used accordingly. It will be so nice for meals for chapati, puree.
while onion got half cooked, add some salt along with and we add chopped green chili. Sauté until onion turn in to golden colour, then only you get nice flavour
at this stage. add 1/2 spoon ginger-garlic paste and add little amount of
turmeric powder. Soon after added the ginger-garlic paste, the masala will
start drying then we should add water, so the onion will get mixed well with
masala and nothing will retain in tawa
Now you notice that the masala got mixed
well at this stage and add tomato, add one piece of onion since we have
boneless chicken, it gets cooked immediately. Already 3/4th of the preparation
is over, then let's we add chicken. Let’s mix the onion and tomato together and
add water little with this and let's we add grinded pepper-cumin paste. Mix it
well. Add two spoon chilli powder, two spoon blowjob powder, 1/4 spoon of anise
powder, 1/4 spoon of cumin powder after the boiling point was reached. Let's we
add pepper powder, add little salt until smell of chili powder vanish sauté
well.
while we cook chicken with bone, we can add
the chicken in advance. Since we cook boneless chicken, add it after the masala
is ready. Even let's we add oil slightly. We will get nice flavour while we sauté
in oil. let's we sauté it like paste. Now it has become like paste. At this
stage add water slightly. We can use sesame oil for those who like healthy dish
and use oil for those you want normal dish. It will be a different taste for those
who cook chicken gravy regularly
Since we cook this dish without coconut, it
will be fine even for next day. Mix the chicken well, with the masala mix. add
little water and let it boil for 5 minutes. As I told, mix the chicken with the
masala and add water. keep boiling it. Let’s we add water and wait for 5
minutes. Now we see, the chicken well mixed with masala and got ready. while we
finish this, add pepper powder slightly and add little salt. while we do it in
sim mode, automatically, let's we get good flavour.
